Founded by the Alfasi family in the heart of an enchanting and secluded oak forest at 1100 meters above sea level in the northern Golan Heights, Odem Mountain Winery is Israel’s northernmost winery. Cabernet Sauvignon grapes are grown at the Kerem Ben Zimra Vineyard in the Galilee Mountains. Climate there is cold in winter, and in summer both by typically Israeli, though moderate in temperatures, sunny days, and by cool misty nights. Volcanic Cabernet Sauvignon was aged in fine French oak barrels for 12 months, a process resulting in a deep ruby colored wine. Full-bodied with firm tannins, flavors once released are of blackberries, blueberries, vanilla and mint, leaving a long bold finish.

Odem Mountain Winery, Israel’s northmost winery, was founded by the Alfasi family. It lies in the northern Golan Heights in the heart of an enchanting and secluded oak forest at an elevation of 1100 meters above sea level.

Shiraz grapes used for this wine are grown at the Kadesh Valley Vineyard in the Upper Galilee. Surrounded by lush mountains, the vineyard is covered with Terra Rosa soil (red soil). Through various temperatures, typical of the vineyard area, grapes of intense color and aroma are developed.

The wine was aged inside the finest French oak barrels over a period of 12 months. Volcanic Shiraz is crimson red in color with shades of maroon. It is rich with a blackberries and violet’s aroma, as well as the ripe flavors of dark plums and blueberries.

Odem Mountain Winery, Israel’s northernmost winery, was founded by the Alfasi family. Volcanic Chardonnay is a dry white wine produced purely from Chardonnay grapes, which went through a slow and cold fermentation process. The wine was aged in French oak barrels over a period of 5 months sur lie. Light golden in color, with an aromatic nose and light wood influences, the wine’s flavor reveals pineapple, ripe melon fruits and citrus. The use of selected grapes combined with aging in the finest oak barrels give this fresh, crisp wine a nice long finish. This wine is part of a 4200 bottle edition, which was filled in March 2007

Cabernet Sauvignon grapes used for this wine are grown at the Kerem Ben Zimra Vineyard in the upper Galilee Mountains. The soil is basaltic, and because of its height of 780 meters, the vineyard enjoys a cool winter and summer characterized by cold nights and sunny daytime, which helps brings the Cabernet Sauvignon to an optimal maturity. Manually harvested at dawn, the grapes then go through a long and cool fermentation process, to extract colors and aroma.

The color of Tigress is a Deep ruby toward garnet. The aroma and flavors of Tigress are reminiscing of ripe black fruits, sweet cedar, and vanilla, enhanced by hints of tobacco and leaving a long strong finish.

Odem – Limited – Scarlet


Scarlet is a red sweet wine, with a deep scarlet to brown color. Full, round & smooth body, followed by a gentle ripe astringency. The wine has a jammy, ripe black plum and a bit of chocolate aroma.

At the end of the harvest season we pick the grapes that are left on the vines whilst their sugar is very concentrated. In the winery we crush the grapes and then ferment them. After the fermentation, the wine ages for 30 months in oak casks under bright sunbeams, which increases the evaporation and oxidation process in the barrel. All of these steps help the development of numerous flavors in the wine.

Amber is a white sweet wine with amber color and mature deep aromas of honey and nuts. Full mouthwatering palate, balanced, round and with a long aftertaste.

The production process starts in the grape vineyard. We harvest the grapes at their best ripening moment, in a handpicked night harvest, where we bring the grapes to separation, crushing and fermentation. After the fermentation, the wine is ages under bright sunbeams by the sweet fine wine tradition, for 28 months in oak casks.

This Cabernet Sauvignon is produced from a single vine right in the backyard of the winery which is at 1060 meters above sea level.  It has been aged 26 months in French oak barrels.  It is  full bodied, velvety, awesomeness in a bottle.  It has beautiful, well defined tannins and a lingering long finish.  Great with steak dinner.
